We thawed six portions out. Upon opening the vacuum sealed package, there was a pleasant aroma of fresh salmon. We typically purchase fresh and frozen wild caught sockeye all the time, organic labeled when possible. None has ever carried such a fresh aroma.
We purposely used less seasoning that we had become accustomed too. We wanted the seasoning to accent the salmon, not over power it.
We baked the filets, over a light base of avocado oil in a glass baking dish, 375°.
I sampled the fish as it cooked. The flesh was light and melted in my mouth. The flavor was something we have not experienced in a long time. We probably over cooked it by a minute or two. None the less, the flesh and skin were very delicious. There was a definite fantastic aftertaste, deeper than the initial flavor.
As much as we appreciate the natural flavors, we plan to experiment to find the balance that works for us.
Oh, the skin held up well. We are used to skin getting stuck to the cooking dish, or having to use higher heat to crisp it so it stays attached.
