    The mild flavor and soft buttery texture are what I like best about sablefish. Although sablefish meat is so delicate, I found that yours was in excellent condition, and no different than fresh sablefish.

    This Black Cod cooked lightly on an iron skillet with nothing but butter, or if you must, olive oil, a little paprika and some capers is the best white fish I've ever had. It's not meaty, more delicate and buttery even without the butter!
