Here’s the real deal on the different “flavors” or species of salmon.

First of all, the flavor depends on the fat content and diet of the salmon which is different in each species but it also has a lot to do with how the fish has been handled. You can have two of the very same species of fish caught in the same area that look, feel and taste completely different. That’s all due to the handling of the fish as soon as it’s caught or lack of. Captain Tony and crew ice and bleed the fish as they come out of the net. All fish are delivered to shore 2xs daily and processed within 24 hours of being caught at our own processing facility. That means any Wild Alaskan Salmon you purchase from us will taste just as fresh as the day it was caught! That is a guarantee straight from Captain Tony.

Wild Alaskan Sockeye  Salmon (Red):

SockeyeSalmonWhere we fish in the Bristol Bay Region of Alaska is the largest Wild Sockeye Salmon run in the world. The very distinct, deep red color of the meat remains throughout cooking which definitely makes an impressive dinner presentation. Sockeye have a strong…but not fishy flavor. The color and flavor are due to their diet of plankton and krill.

Wild Alaskan Keta (Silverbrite or Chum) Salmon:

Keta-SalmonDon’t be fooled by all the rumors and misconceptions you may have heard about Wild Keta Salmon that it’s not “good” salmon. Wild Keta has gotten a bum rap over the years, with no help that it’s “Alaskan” name “Chum or Dog Salmon” does not sound very appetizing. As long as it has been properly handled (on the boat and in processing) it is an extremely firm and high quality salmon. It does have less oil content than Sockeye or King Salmon but that in turn gives it a lighter color and flavor. In fact, a lot of people prefer it to Sockeye for the lighter flavor.

King-SalmonThe largest and most rich in fat and flavor of all the Wild Pacific salmon species. Wild King are not a huge amount of Captain Tony’s annual catch but you should definitely get some when it’s available as we are typically sold out by the end of the year.
