Ingredients

  • 400g Pacific Cod
  • 750g frozen paella
  • 2 lemons
  • 4 Tbls vegetable oil
  • 1 thyme sprig
  • salt
  • ground black pepper

Directions

  • Wash lemons in hot water, pat dry and cut into wedges.
  • Prepare paella according to package directions.
  • Wash Pacific Cod fillets, pat dry and cut into pieces.
  • Heat oil, add two lemon wedges and season with salt and pepper.
  • Wash thyme, flick to release any retained water, and add to the oil.
  • Fry Alaska Cod fillets with the lemons and thyme for approx. 8-10 minutes.
  • Arrange the Alaska Cod pieces on the prepared paella, garnish with the remaining lemon wedges and serve.
