Elevate your dinner with a simple yet delightful Fish Fry of crispy Black Cod. With its golden exterior and tender flesh, it’s a comforting and satisfying meal for the whole family. Ingredients

  • 16 portions Black Cod, 1-2 oz pieces each
  • 2 cups of milk
  • 2 egg yolks
  • 2 tablespoons salt, for milk
  • 1 cup wondra flour, or super fine flour
  • 1 cup corn starch
  • 2 oz madras curry
  • 1 gallon canola oil
  • 1 cup of mayonnaise
  • 1 oz ras al hanout spice
  • salt
  • pepper
  • Lime to squeeze on top, to be served cut in wedges on final plate

Instructions

  1. To begin, lets make your Aioli sauce. Combine in a small bowl, ras al hanout with mayonnaise, season with salt and pepper. Whisk until well combined.
  2. Taste and adjust seasoning. Set aside in your refrigerator to let cool.
  3. Soak Black Cod pieces in milk for 1 hour.
  4. Make a dip with egg yolks and 2 oz of milk.
  5. Make a dredge of corn starch, flour and curry.
  6. Place the Black Cod into flour dredge then egg wash, then back into flour dredge.
  7. Fry fish at 350 degree Fahrenheit until golden brown.
  8. Garnish plat with Aioli in a side dish, with a slice of lime.
