Ingredients
- 16 portions Black Cod, 1-2 oz pieces each
- 2 cups of milk
- 2 egg yolks
- 2 tablespoons salt, for milk
- 1 cup wondra flour, or super fine flour
- 1 cup corn starch
- 2 oz madras curry
- 1 gallon canola oil
- 1 cup of mayonnaise
- 1 oz ras al hanout spice
- salt
- pepper
- Lime to squeeze on top, to be served cut in wedges on final plate
Instructions
- To begin, lets make your Aioli sauce. Combine in a small bowl, ras al hanout with mayonnaise, season with salt and pepper. Whisk until well combined.
- Taste and adjust seasoning. Set aside in your refrigerator to let cool.
- Soak Black Cod pieces in milk for 1 hour.
- Make a dip with egg yolks and 2 oz of milk.
- Make a dredge of corn starch, flour and curry.
- Place the Black Cod into flour dredge then egg wash, then back into flour dredge.
- Fry fish at 350 degree Fahrenheit until golden brown.
- Garnish plat with Aioli in a side dish, with a slice of lime.
