Ingredients
Marinade
- 2 tbsp honey
- 2 tbsp soy sauce
- 2 tbsp chopped parsley
- 1 tbsp orange zest
- 1 tbsp chopped ginger
- 1 tsp chopped garlic
- salt and pepper
Wild Salmon Skewers
- 3 Alaska Wild Salmon Fillets
- 1/2 pineapple
- 1 red bell pepper
- 1 red onion
Directions
- In a bowl, mix all the ingredients for the marinade.
- Peel the skin from the fillets and dice.
- Dice the pineapple as well.
- Place the wild salmon and pineapple pieces in a bowl and mix with the marinade.
- Cover and let marinate in the refrigerator for about 15 minutes.
- Then wash and dice the bell pepper.
- Peel the onion and chop it.
- Preheat the grill to medium heat and oil the grill rack.
- Place the salmon cubes, pineapple cubes, bell pepper cubes and red onion cubes on skewers in an alternating pattern.
- Place skewers on hot grill rack.
- Cover and grill 8-10 minutes, turning skewers several times.
- Serve with noodles or white rice.
