Ingredients

Marinade

  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 2 tbsp chopped parsley
  • 1 tbsp orange zest
  • 1 tbsp chopped ginger
  • 1 tsp chopped garlic
  • salt and pepper

Wild Salmon Skewers

Directions

  • In a bowl, mix all the ingredients for the marinade.
  • Peel the skin from the fillets and dice.
  • Dice the pineapple as well.
  • Place the wild salmon and pineapple pieces in a bowl and mix with the marinade.
  • Cover and let marinate in the refrigerator for about 15 minutes.
  • Then wash and dice the bell pepper.
  • Peel the onion and chop it.
  • Preheat the grill to medium heat and oil the grill rack.
  • Place the salmon cubes, pineapple cubes, bell pepper cubes and red onion cubes on skewers in an alternating pattern.
  • Place skewers on hot grill rack.
  • Cover and grill 8-10 minutes, turning skewers several times.
  • Serve with noodles or white rice.
