This elegant yet simple dish is perfect for a special dinner at home, whether you’re entertaining guests or treating yourself to a weekend meal.

Ingredients

Chilean Seabass

  • 4 Chilean Seabass portions
  • 1.5 Tbsp Butter or Ghee
  • 1.5 Tbsp Olive oil or Avocado oil
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Black Pepper or to taste
  • 1/2 tsp Paprika

Lemon Sauce

  • 1/4 cup unsalted Butter
  • 2 Tbsp Lemon Juice, about 1/2 a large lemon
  • 1/2 tsp Salt
  • 1/4 tsp Black Butter

Directions

  • Pat the Seabass dry with paper towels. Generously season both sides with salt, pepper and paprika.
  • Using a large skillet heat the butter/ghee and oil over medium-high heat.
  • Once the oil and butter shimmer, add the Chilean Seabass and sear for about 3-4 minutes per side. The cooking time will depend on the thickness of your portions.
  • When ready to flip, if the portions stick, let them cook for 10-15 seconds more, and then try again.
  • The fish will be ready when it flakes easily with a fork and has reached an internal temperature of 140-145 degrees F.
  • To make the lemon sauce, melt 1/4 cup butter in small sauce pan over medium-low heat until lightly browned. Add the lemon juice, salt, and pepper and mix well.
  • When everything is ready, spoon the lemon butter sauce over the pan seared Chilean Sea Bass and enjoy!
