Creamy avocado pesto meets perfectly seared Alaskan salmon in this fresh, flavor-packed pasta. This dish delivers a rich yet refreshing bite—perfect for an easy weeknight dinner or a light, satisfying meal anytime.
Ingredients
- For the Pesto:
- 1/2 Avocado
- 1 handful Basil Leaves
- 1 cup Fresh Spinach
- 2 Tbsp grated Parmesan Cheese
- 2 Tbsp Olive Oil
- 2 Garlic Cloves
- 1 Tbsp Pine Nuts
- Black Pepper, to taste
- For the Pasta and Salmon:
- 1 Alaskan Salmon portion
- 1 Cup Pasta of choice
- 1 tsp Olive Oil

Directions
- Step 1: Make the Pesto
- In a food processor, blend the avocado, basil, spinach, Parmesan, olive oil, garlic, pine nuts and black pepper until smooth. Set aside.
- Step 2: Cook the Salmon
- Heat a pan over medium heat and drizzle with olive oil. Cook the salmon fillet for about 3 minutes per side until lightly seared but still tender inside. Remove from the pan and cut into cubes.
- Step 3: Cook the Pasta
- Bring a pot of salted water to a boil and cook the pasta according to package instructions, drain well.
- Step 4: Assemble the Dish
- Toss the pasta with the avocado pesto until evenly coated. Top the pasta with salmon cubes and sprinkle with extra pine nuts and Parmesan shavings. Serve immediately.
