Ingredients

  • For the Pesto:
    • 1/2 Avocado
    • 1 handful Basil Leaves
    • 1 cup Fresh Spinach
    • 2 Tbsp grated Parmesan Cheese
    • 2 Tbsp Olive Oil
    • 2 Garlic Cloves
    • 1 Tbsp Pine Nuts
    • Black Pepper, to taste
  • For the Pasta and Salmon:

Directions

  • Step 1: Make the Pesto
    • In a food processor, blend the avocado, basil, spinach, Parmesan, olive oil, garlic, pine nuts and black pepper until smooth. Set aside.
  • Step 2: Cook the Salmon
    • Heat a pan over medium heat and drizzle with olive oil. Cook the salmon fillet for about 3 minutes per side until lightly seared but still tender inside. Remove from the pan and cut into cubes.
  • Step 3: Cook the Pasta
    • Bring a pot of salted water to a boil and cook the pasta according to package instructions, drain well.
  • Step 4: Assemble the Dish
    • Toss the pasta with the avocado pesto until evenly coated. Top the pasta with salmon cubes and sprinkle with extra pine nuts and Parmesan shavings. Serve immediately.
