Ingredients

  • 2 Haddock fillets
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 4 Tbsp Olive Oil
  • 1 Cup Cherry Tomatoes
  • 1 large Lemon, sliced
  • 2 cloves Garlic, slices
  • 2 sprigs of Thyme

Directions

  1. Preheat oven to 400F.
  2. Prepare a 9×13 inch baking dish and set aside.
  3. Pat dry haddock filets and season with salt and pepper.
  4. Add the tomatoes, olive oil, lemon garlic, and thyme to the prepared baking dish. Mixing everything together. Place haddock on top, pushing aside the tomatoes/lemons/garlic around them.
  5. Bake for about 15-17 minutes, or until the fish is opaque and flakes easily with a fork.
  6. Remove the baking dish from oven and serve immediately.
