How to Cook Lobster
- Transfer your frozen lobster tails to the refrigerator 24 hours before you want to cook and eat them.
- When fully thawed, fill a large pot with water and heat on high to bring it to a boil. Optionally, salt or Captain Tony's Wild Alaska Rub can be added to the water.
- Use kitchen shears to cut through the top shell of each lobster tail. Stop when the tail fin is reached.
- Gently pull apart the sides of the shell to expose the meat, without taking the shell off completely.
- Add the thawed tails to the boiling water.
- Once the water returns to a boil, reduce the heat to a simmer and cover the pot.
- Cook 4oz. lobster tails for 5 minutes. If your lobster tails are bigger than 4oz., add an additional minute for each ounce over 4oz.
- Transfer the tails to a bowl of ice water so they stop cooking, then drain.
- Set the tails on a platter for serving. Serve with a sauce cup filled with melted butter or ghee for dipping.
